
Blueberry & Vanilla Keto Protein Muffins
There’s nothing quite like the taste and texture of a delicious bakery-style blueberry muffin, it’s just such a shame that they don’t fit my dieting macros! Not to worry, I’ve created the following keto friendly recipe – Ultra low carb, blueberry & vanilla high protein muffins!
This recipe is a great way of conquering those muffin cravings, whilst remaining healthy and on track with your diet. This recipe is also so easy to make, it only takes a couple of minutes to prepare the ingredients, with cooking time being as minimal as 10-15 minutes!
This recipe contains no flour, meaning that these muffins are also low in calories, yet packed with high protein and healthy fats.
Ingredients
1 Scoop – XL Nutrition XTRA Whey – Vanilla
2 Free Range Eggs
1tsp Baking Powder
1tbsp Stevia Sweetener
1tsp Vanilla Extract
150g Greek Yoghurt
Toppings
25g Blueberries
Directions
Simply mix all of the ingredients into a bowl, be careful not to overmix!
Then grease a muffin tray with your choice of 1 calorie cooking spray, I used a muffin tray that makes 6 muffins, but you can make smaller or larger muffins based on your preference.
Set the oven to 180 degrees and places the muffins in for 10-15 minutes depending on the size, the bigger your muffins, the longer they’ll take, so be patient!
Once baked, leave to cool for a couple of minutes before popping them out of the tray and demolishing!
