Mum's Super Recipes!

Making your meals taste good isn’t easy, we have established this over and over again. Whilst you can alter the way you cook your meats to get a bit of flavour, at the end of the day there are very few sauces which fit the bill of ‘100% guilt free’. However, whilst I have been doing my transformation my mum has been following a diet I set out for her, but she is VERY picky guys (you know what old women can be like!!!) so it forced her to think of various ways to make her meals taste good. Here are 3 of the top concoctions she has come up with to really make her meals taste great. It goes without saying; this had made dieting a dream for me really because there is always something NICE and HEALTHY to add to most of my meals.

Tomato and Vegetable Sauce –

This is such a simple yet VERY tasty and nutritious sauce to have with almost every meal. You can throw this over your cod, chicken, beef and even your egg whites. Personally, I have found this to be very helpful with otherwise very dry meals.

1 chopped carrot

½ chopped red onion

½ chopped green pepper

3 sliced mushrooms

Tablespoon of low sugar tomato puree

Tin of low sugar tinned tomatoes

30g almonds

Just chuck all the ingredients into a saucepan and stir until cooked, there simply couldn’t be an easier way to make a meal taste so good without sacrificing any of your nutritional goals! Be sure to add a little salt and pepper to add some extra flavour.

Chicken and Lentil Soup –

Soup is always nice to have, especially when you are hungry! There is something about it which is very comforting, or in my case, very convenient! Making a nice big vat of soup is great if you are busy because you know if push comes to shove you always have good old soup to fall back on. This soup recipe is one which I have enjoyed throughout my transformation.

150g chopped chicken breast

50g lentils

1 chopped carrot

½ chopped green pepper

½ sliced red onion

3 sliced mushrooms

Cup of boiling water

Chicken stock

If you want you can also add some potato in depending on your carbohydrate targets and whether or not you would prefer to have some lovely crispy brown bread to dunk in your soup instead.

Foiled Cheesy Chicken

Cheese is one of the things I miss the most on my diet, I just love to eat cheese with crackers sometimes but needs must! However, I find this recipe goes a long way to suppressing that particular craving.

180g chicken breast

30g sieved low fat cottage cheese

½ sliced red onion

½ chopped green pepper

5 chopped cherry tomatoes

To prepare this all you need to do is get some foil and coat the inside with you guessed it, 1 cal extra virgin olive oil spray. Then you make deep incisions down the chicken breast and stuff it with the cottage cheese, and then you just pack the vegetables on top and wrap them all up into a foil parcel. All you then have to do is let it bake in the oven and eat it!!!

OK that is enough, I am drooling at the mouth and quite frankly it isn’t fair! Oh wait, these are guilt free so I tell you what I am going to go for the chicken parcel now with the tomato and vegetable sauce all over it!!! Oh yes, enjoy guys!
