1½ cup raw cashews
3 cups water
3 cups cashew milk (or carton coconut milk)
2 scoops Protein Dynamix Dynapro Anytime chocolate protein powder
½ cup zero-calorie sweetener
2 tablespoons dark cocoa powder
2 teaspoons cacao nibs (optional)
1 teaspoon vanilla extract
½ teaspoon xanthan gum (optional)
¼ teaspoon sea salt
OPTIONAL ADD INS:
10 coffee beans
½ teaspoon mint extract
¼ cup coconut plus ½ teaspoon coconut extract
½ cup raspberries
¼ cup sugar-free chocolate chips (for the top)
- Soak the cashews in the water for 6 hours to overnight. Drain and rinse.
- Place remaining ingredients into a large blender and process for two minutes or until completely smooth. Include add in items here too.
- Pour into an ice cream maker and follow manufacturer’s directions. Ice cream should be firm within 20 minutes. Scoop into 8 small frozen bowls.
