1 large ripe banana
1 scoop coconut or banana protein powder
2 tablespoons cashew butter
3 tablespoons coconut flour
2 tablespoons oat flour
½ teaspoon coconut extract
4 tablespoons plus 3 tablespoons shredded coconut
1. Break banana into pieces and add to a bowl. Add protein powder, cashew butter, flours, extract, 4 tablespoons coconut, stevia and salt.
2. With beaters set to low-medium, mix until thick and well combined. Mixture should be firm like dough. If too crumbly, add almond milk by the teaspoon to get a thick dough.
3. Roll into 6 balls. Coat in remaining coconut.
4. Place in fridge for 20 minutes or until ready to eat. Will save 2 days in fridge.
