3 Low Calorie Winter Warmers - Ditch The Summer Smoothies For Healthy Soups

 

If you’re like me and really enjoy creating a variety of foods you know are full of goodness, these soups are sure to warm your tastebuds up while it’s cold outside.

Misconception means that many assume that the only thing on a clean diet menu is chicken and rice, so it’s time to prove that theory wrong and introduce not only yourself, but the world, to a delicious selection of soups!

 

Low Calorie Cheddar & Cauliflower Soup

 

You will need:

1 tbsp olive oil

2 leeks (sliced and rinsed)

300g cauliflower

300ml milk

200ml water

Pinch of salt

Seasoning of your choice

3 tbsp all-purpose flour

150g cheddar cheese

 

How to do it

  1. Heat the oil in a large saucepan and add all sliced leek until soft
  2. Add cauliflower, half of the milk and seasoning and bring to the boil
  3. Reduce heat and cover until the cauliflower is soft
  4. Separately combine the remainder of the milk with flour
  5. Once the cauliflower mixture is soft and you are able to stir, add in the milk/flour mixture
  6. Remove from the heat and stir in cheddar cheese
  7. Enjoy!

Low Carb Asapragus Soup

 

You will need:

25g butter

1 tbsp vegetable oil

350g asparagus (woody ends chopped off)

½ onion

1 garlic clove

2 handfuls spinach

700ml vegetable stock

 

How to do it

  1. Heat butter and oil in a saucepan until melted. Add the asparagus and ‘fry’ to soften
  2. Add onion, and garlic and cook for 5-10 mins, then stir in the spinach and stock.
  3. Bring to the boil and hand blitz
  4. If necessary, add water to loosen mixture
  5. Enjoy!

Low Sugar Leek, Bacon & Potato Soup

You will need:

25g butter

3 rashers non-smoked bacon (cubed)

1 onion

400g sliced leeks

3 medium potatoes (peeled and cubed)

700ml vegetable stock

142ml single cream

 

How to do it

  1. Melt butter in large pan and then add bacon and onion to fry
  2. Add the leeks and potatoes and stir well then cover and turn down the heat for 5 minutes
  3. Pour in the stock and seasoning and then hand blitz until smooth
  4. Add single cream and stir well
  5. Enjoy!
