Beef Satay Stir Fry & Noodles

Serves 2 people

For the beef satay -

300g rib eye beef cut into strips

1 tbsp soy sauce

½ tsp chilli flakes

2 tbsp organic crunchy peanut butter

1 tbsp pure sesame seed oil

For stir fry -

1 tbsp sesame seed oil

1 red onion peeled and sliced

1 clove crushed garlic

2 carrots peeled & cut into small slices

1 red pepper sliced

4 stalks of brocolli

½ cabbage

½ cup bamboo shoots

4 water chestnuts sliced

1 tbsp soy sauce

50g wholewheat noodles

Set a frying pan on a high heat and put the sesame oil, chilli flakes, soy sauce and peanut butter into it. Stir continuously with a wooden spoon, then add the beef and cook through until golden brown. Whilst the beef is cooking, set a wok on a high heat with the sesame seed oil, once heated through add the onion and garlic, fry until golden brown. Then add the broccoli, carrot, pepper, water chestnuts, cabbage and bamboo shoots. Fry and stir together until crunchy and crisp. Place 300ml of boiling water to a pan and place it on a medium heat, place 4 nests of wholewheat noodles, bring the water to the boil, check when they are done, drain and serve. Place the noodles on the plate, stir fried vegetables and top with the beef satay. Sprinkle a handful of peanuts to finish and serve.
